Sift the flour and salt into a bowl to remove any lumps. Make a well in the center.

Gradually pour the water into the well, mixing with a spoon, chopsticks, or your hands. Stir in a circular motion as you add the water until a dough forms.

Lightly knead the dough in the bowl, then transfer it to a floured surface and knead until smooth.

Wrap the dough in plastic wrap to prevent it from drying out. Let it rest for 30 minutes.

After 30 minutes, divide the dough in half. Roll each half into a log about 8 inches (20 cm) long. Cut each log into 8 pieces, for a total of 16 pieces.

Dust your work surface with a little flour. Flatten each piece of dough, then roll it out as thin as possible (the thinner, the better for Dim Sum).

Use a round cutter or bowl to cut out circles, discarding the scraps. Repeat with the remaining dough pieces. After cutting, you can roll the wrappers even thinner if desired.

When stacking the wrappers, sprinkle a little flour between each layer to prevent sticking.

Store any unused wrappers in an airtight container in the refrigerator for 3-4 days.
