Carrot Cake

Carrot Cake Recipe

Preheat oven to 350*

Grease and lightly flour 13x9 inch cake pan (I prefer glass or baking dish and use Pam for baking spray)

Combine dry ingredients in a bowl

2 cups flour
1 tsp. salt
2 tsp. baking powder
1 1/2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. nutmeg

In a large bowl combine

4 eggs (well beaten)
2 cups sugar
1 1/2 cups oil (I usually use a vegetable blend)
1 teaspoon vanilla
2 cups grated carrots
1 cup crushed pineapple (drained)
1 cup shredded coconut

Mix well and add dry ingredients (flour, etc.)

Pour into prepared pan and bake 50-60 minutes. Turn off oven and remove cake after 15 minutes. Be careful not to overbake. I turn off over after 50 minutes and remove cake 15 minutes later.

Cool completely before frosting.

Cream Cheese Frosting

1 cube butter
Two (2) 8 oz. packages of cream cheese (do not use whipped or low-fat variety)
1 tsp. vanilla
1 lb. powdered sugar

Mix well until creamy. Pile it on!!!
