A few more tips

Some of my own notes: If you make a double batch, it's better to prepare them separately so you can work the dough more easily. Hold back one cup of flour when you start kneading to see how much the dough needs. Make half a batch of syrup (1 part water, 1 part sugar, 1 part honey) separately for each baking sheet to prevent it from caramelizing as you reheat it. I make these melomakarona every year and everyone loves them. Thank you to Vefa for the wonderful recipe—I hope you enjoy them too! Good luck!!

Ingredients

40-50 pieces
  1. 1 1/2 cupsvegetable oil (about 355 ml)
  2. 1/2 cupshortening (about 115 grams)
  3. 1 cupsugar (about 200 grams)
  4. 3/4 cuporange juice (about 180 ml)
  5. 1/4 cupbrandy (about 60 ml)
  6. 2 teaspoonsorange zest
  7. 2 teaspoonsbaking powder
  8. 1 teaspoonbaking soda
  9. 8 cupsall-purpose flour (about 1 kg), sifted
  10. Syrup
  11. 2 cupshoney (about 670 grams)
  12. 2 cupssugar (about 400 grams)
  13. 2 cupswater (about 475 ml)
  14. Topping
  15. 1/2 cupwalnuts, finely chopped (about 60 grams)
  16. 1 teaspoonground cinnamon
  17. 1/2 teaspoonground cloves

Steps

  1. 1

    Beat the vegetable oil, shortening, sugar, orange juice, orange zest, and brandy together.

  2. 2

    In a separate bowl, mix the baking powder, baking soda, and sifted flour. Make a well in the center, pour in the wet ingredients, and knead lightly until combined.

  3. 3

    Shape the dough into cookies and bake at 350°F (175°C) for about 30 minutes, until golden brown.

  4. 4

    For the syrup, boil the honey, sugar, and water for 5 minutes. Skim off any foam, then pour the hot syrup over the cookies as soon as they come out of the oven.

  5. 5

    Once the cookies have absorbed the syrup, flip them over so both sides soak up the syrup.

  6. 6

    Let the cookies cool completely.

  7. 7

    Mix the walnuts, cinnamon, and cloves, then sprinkle over the cookies.
