In a bowl, combine the flour, baking powder, and one of the teaspoons of ground cinnamon.

In a separate bowl, whisk together the brown sugar, honey, yogurt, corn oil, and eggs.

Chop the apples into small cubes.

Take half of the chopped almonds and add them to the flour mixture. Place the rest in a small bowl.

Mix the remaining almonds with the second teaspoon of cinnamon and the 4 teaspoons of brown sugar. This mixture will be used for topping.

Preheat the oven to 400°F (200°C) and line a muffin tin with paper liners.

Pour the wet ingredients into the dry ingredients. Add the apples and gently mix with a whisk—don’t overmix!

Spoon the batter into the muffin liners, then sprinkle with the topping mixture.

Bake for 20 minutes or until risen and golden brown.
