Grate and salt  the zucchini.

Let them drain their liquids for at least 15 minutes. 

After straining them, add the eggs, spearmint and pepper. 

Add flour (to which you have added 1 tbsp baking powder) until you get a batter. 

Fry in hot olive oil.
