Heat the oil in a non-stick frying pan over strong heat.

When it's really hot, add the meat cut into small pieces. Leave it over medium heat until it gets golden brown and then season with salt and pepper and add the onion.

When the onion gets tender, stir in the wine and add pepper, mustard and thyme while stirring.

Cook for an additional 6 minutes more or less and then add the honey, turning up the heat for a while towards the end. However, take care that you don't leave it too long to cook at this stage, just time enough to let the honey get incorporated. In any other case, its juices will be absorbed and it will get dry!
