Peel the apples and remove the seeds. Quarter them and place them in a bowl. Add the lemon juice so that they don't turn brown until you finish peeling all of them.

Place the water in a pot and as soon as it boils add the sugar, the apples and the cinnamon. Let them simmer for about 15'. Don't stir because they will break apart.

If after 15' of boiling the syrup still looks too watery, remove the apples with a sifter ladle and let the syrup boil for an additional 5 minutes.

Pour the syrup over your compote and when it cools a little, serve it. If you don't consume it immediately, as soon as it cools thoroughly store in a sterilized airtight jar.
