So I had sweet potatoes, Irish potatoes, veggies, cooking cream and chicken breasts and decided to whip up a quick meal.
Creamy potatoes stir fry medley
So I had sweet potatoes, Irish potatoes, veggies, cooking cream and chicken breasts and decided to whip up a quick meal.
Steps

Chop up the chicken breasts into cubes, marinate with seasonings of choice and set aside.

Chop up all the vegetables, peel and chop the beets and set aside.

Peel the Irish and sweet potatoes, cut into big cubes and boil with a teaspoon of salt. Once it's almost cooked, drain and transfer to a bowl, set under running water to stop the cooking. Set aside.

In a dry pan, pour in the coconut oil, when its heated, pour in the marinated chicken breasts, stir fry and remove the breasts from the pan.

Add more oil to the pan if necessary. Pour in the onions, pepper and beets. Stir fry for 2 minutes and add seasoning. Pour in the semi cooked potatoes, stir fried chicken breasts and then the cooking cream. Allow to cook for 3-5 mins.

Add chopped veggies, check for seasoning and turn off the heat.

Serve with a boiled egg.
