So I have a toddler who will not eat most things unless it is cooked. In a pot. And is made up of various colors. She is especially into green and red and orange. Needless to say, I have to get creative with ways to add meat and / or a source of protein along with her colors of choice. Also, she likes rice. Lots of rice.

So I have a toddler who will not eat most things unless it is cooked. In a pot. And is made up of various colors. She is especially into green and red and orange. Needless to say, I have to get creative with ways to add meat and / or a source of protein along with her colors of choice. Also, she likes rice. Lots of rice.

Using a large pot, on medium - high heat brown your chopped onions in the vegetable oil.

Then add the chillies & garlic and a half a cup of water and continue to cook the onions for ten minutes

Next add your sausage and then potatoes (and other vegetables if using additional vegetables) and salt and pepper to your taste. Cook for ten minutes.

Mix the chutney with the rest of the water and add to the pot. Cook until the potatoes are nice and soft. Serve with rice on the side if you wish.
