This was my first attempt at a low carb meatloaf and I was very impressed with the outcome. Next time I may not weave the bacon and instead just place 8 across the top so it would get one slice per serving. The weave makes slicing complicated.

Ingredients

8 servings
  1. 1 lbGrass Fed Ground Beef
  2. 1 lbGround Bison
  3. 1 lbMild Ground Sausage
  4. 10Bacon Slices
  5. 3Shallots - diced
  6. 1Orange Bell Pepper - diced
  7. 3 TbspMinced Garlic
  8. 4Eggs
  9. 1/2 CupCoconut Flour
  10. 1 CanTomato Paste
  11. 1 TbspFresh Chopped Basil
  12. 1 TbspOregano
  13. 1 TspSea Salt
  14. 1 TspBlack Pepper
  15. 3 TbspSweet Baby Ray's Kickin' Bourbon bbq sauce

Cooking Instructions

    Preheat oven to 350

  2. 2

    Add eggs to mixing bowl and lightly beat

  3. 3

    Chop all veggies and add to mixing bowl

  4. 4

    Add tomato paste and seasonings to mixing bowl and mix evenly

  5. 5

    Add Coconut flour and mix evenly

  6. 6

    Add all meat and hand mix until blended

  7. 7

    Place mixture on baking sheet and form into loaf

  8. 8

    Glaze top of loaf with bbq sauce

  9. 9

    Weave bacon on top of loaf

  10. 10

    Bake at 350 for 1 hour then up temperature to 415 for additional 30 minutes

  11. 11

    Allow to cool for 15 min before serving

On this recipe I’m thinking of cutting it in half because that’s one big meatloaf LOL and I don’t have that many people to feed... my question is would I change the cooking time in the oven if this was halved?
