Ingredients

4 to 6 servings
  1. 300-400 gGreen Beans
  2. Salt to blanch beans
  3. 2 clovesGarlic *crushed
  4. 2 tablespoonscapers
  5. 1 tablespoonOlive Oil
  6. Freshly Cracked Pepper
  7. 1 tablespoonPine Nuts *lightly toasted

Steps

  1. 1

    Wash Green Beans and cut into short pieces if you like. Cook Green Beans in boiling salted water for 2 to 3 minutes, ensuring they don’t lose their crunchiness. Drain and dip into cold water to stop cooking further, then drain well.

  2. 2

    Heat Olive Oil and crushed Garlic over a medium heat. When it is aromatic, add capers and green beans and sauté for a few minutes.

  3. 3

    Sprinkle some freshly cracked Pepper and lightly toasted Pine Nuts on top and Serve.
