I love trying new ways to eat vegetables and to spice things up! I love how the Lemon juice and zest just lifts the flavour of the grilled marrows. A quick, easy and healthy recipe for anyone!

Preheat a griddle pan on a high heat

Slice the marrows in halves and season with salt, olive oil and lemon juice.

Place in the griddle pan and grill on both sides for 5 minutes in total. Until the dark griddle lines are achieved.

Drizzle with a little olive oil and the zest of half a lemon. Serve as a side dish or in a salad.
