Ingredients

  1. 1medium sized tilapia
  2. Yam
  3. 1large onion
  4. 2large tomatoes
  5. 4scotch bonnets (Rodo)
  6. 2 clovesgarlic (minced)
  7. Kosher Salt
  8. Black pepper
  9. Olive oil
  10. Paprika
  11. Spice for fish
  12. Vegetable oil for frying

Steps

    Clean the fish

  2. 2

    Put all spices and seasoning in olive oil and rub all over the fish.

  3. 3

    Leave to marinate for about 30 minutes

    Put into the oven for 30 minutes at 190 degrees Celsius. I used a halogen oven

  5. 5

    Cut and fry your yam

  6. 6

    Cut your onions, tomatoes and rodo into strips.

  7. 7

    Lightly oil your pan, add in minced garlic, onions, tomatoes and pepper.

  8. 8

    Sauté on low heat until onions soften, season with salt and seasoning

  9. 9

    Take off the heat

  10. 10

    Serve!!
