There are various kinds of pain d'epices (ginger bread in France) and my traditional Alsacien recipes require overnight rest… This recipe is not really genuine but easy and good. I used 220g of cake flour, 100g of bread flour and 80g whole grain flour this time.

  1. 400 gall-purpose flour (*see the description)
  2. 160 ghoney
  3. 200 mlorange juice
  4. 100 gsugar
  5. 2eggs
  6. 5 Tbsolive oil
  7. 5 gbaking powder
  8. spices of your choice (cinnamon, cardamon, anise, clove, nutmeg, mace, ginger, fennel, coriander etc...)

    Mix all the liquid ingredients.

    Add the flour and baking powder shifted together, and the spices. Mix well.

    Pour in a cake mold. Hit it from the bottom for several times to get rid of the extra air in the dough. Bake in the oven preheated at 140-150 C for about 60 minutes.
