The marinade used were all staple items from my pantry. It's so easy ! Cayenne pepper gives the sauce a spicy kick!

Clean chicken, rinse and remove innards, rinse then pat dry

Make slices into the onion but not let it not break apart. Cut the scallions in to half

Sprinkle 1 tsp of salt into the cavity of the chicken and stuff it with the onion, garlic and scallion

Sprinkle the remaining season on the chicken along with the garlic. You can lift the skin at the breast and get some of the season and garlic under there.

Spray baking pan with cooking spray for easy cleaning. Place chicken in the baking pan breast side down, cover and let it bake for 45 mins at 400°F. uncover chicken and gently flip it on its back, brush with olive oil and let roast for another 1hr 15 min at 375°F

To make gravy, you can pour a little warm water in the pan after removing the chicken, use a spoon to get all those dripping into a sauce pan, add enough corn starch to thicken and let simmer. Strain sauce and drizzle over chicken before serving.
