Ingredients

  • Roasted chicken homemade or store bought
  • 64 ozHomemade or store bought chicken broth
  • 2 earscorn cut into bite size pieces
  • 1chayote squash sliced
  • 2green plantains cut into bite size pieces
  • 1 candiced tomatoes with green chilies
  • 2 Tbspchili powder
  • 2 Tbspcumin
  • 2 Tbspsmoked paprika
  • to taste Salt and pepper
  • 1 bunchcilantro
  • 1avocado
  • 1lime

Steps

  1. 1

    Cook chicken if homemade season with salt and pepper and season with spices in recipe as well.

  2. 2

    In a large stock pot and broth, vegetables, spices and a few sprigs of cilantro, bring to boil reduce heat and simmer until vegetables are tender.

  3. 3

    Remove chicken from the bone into bite size pieces add in soup.

  4. 4

    Place in bowl add fresh cilantro, avocado and squeeze of lime. Enjoy!!
