1 lbboneless chicken breast
1 canenchilala sauce
1 packagestaco bell or other taco mix
1 packagesshredded mexican cheese blend
6soft tortilla shells

preheat oven to 350

cube chicken and sautee in olive oil until lightly cooked, about 3 minutes

add taco mix and water as per directions, cover and simmer for 5 minutes

fork out chicken peices and cut into small peices on cutting board

place chicken into shells with sprinkle of cheese, place into corning ware
6

once done with all shells, cover with enchilada sauce and remainder or cheese
7

cook covered for 30 minutes

I made this but used shredded chicken instead of cubed and it was still amazing. One of my favorites to make now. Super simple.
