preheat oven to 350

cube chicken and sautee in olive oil until lightly cooked, about 3 minutes

add taco mix and water as per directions, cover and simmer for 5 minutes

fork out chicken peices and cut into small peices on cutting board

place chicken into shells with sprinkle of cheese, place into corning ware

once done with all shells, cover with enchilada sauce and remainder or cheese

cook covered for 30 minutes
