sieve the flour and salt into a mixing bowl .

Rub in the butter with finger tips until mixture resembles breadcrumbs .

Add the caster sugar. Mix to a soft but manageable dough with with the egg yolk and a little water ,using a round bladed knife .

Knead until smooth , wrap securely in plastic and refrigerate until required .
