Ingredients

  1. 1 1/2 lbunbleached white bread flour.plus extra for dusting
  2. 2 tspsalt
  3. 1 ozfresh yeast
  4. 12fl oz lukewarm water
  5. 5 tbspolive oil
  6. 8 ozpitted black olives sliced or chopped
  7. 1red onion, finely chopped
  8. 2 tbspchopped fresh coriander or mint

Steps

    Makes 2 Loaves or make one large loaf and bake for 15 minutes longer

    lightly grease two bakingsheets. Sift the flour and salt together into a large bowl and make a well in the centre

  3. 3

    in a jug, bkend yeast with hald the water.Add to the centre of the flour with the remaining water and olive oilmix to a soft dough.

  4. 4

    turn out dough onto a slightly floured surface and knead for 8-10 minutes until smooth.Plae into a ligtly oiled bowl ,cover with lightly oiled clingfilm and leave to raise in a warm placefor 1 hour until it is doubled in size.

    turn onto a lightly floured surface and knock back .Cut off a quarter from the dough cover with slightly oiled clear film and set aside

  6. 6

    roll out the large piece of doughto a round.Sprinkle with olive onion and herbs then gently bring up the sides of circle and knead gently together.Cur the dough in halves, shape each halce into a plumb loaf.about 8 in long place onto the baking sheets.

    divide the reserved dough into four equal pieces and roll into sausages about 24 inc long twist together and cut in half.Brush the centre of the loaf with water and place a sausage either end of the loaves tucking the ends under.

    cover with slightly oiled clear film and lwave to raise in a warm place for about 45 minutes until twice the size.

    preheat oven to 220C/425 F / Gas 7

  10. 10

    dust the loaves with flower and bake for.35-40 minutes or until golden .It should sound hollow when tapped. Cool on wire rack.
