Steps

First pressure cook arbi for 4 whistle with salt. See size and make a choice. And depeeled it. Make bite size pieces of it and gently press it between the palms.

Now make a mixture of rice flour, samolina, red chilli powder and mix it.

Coat arbi pieces with dry mixture of rice and pat extra down. And shallow fry it till it become golden brown.

After frying take 1 tbsp of oil in pan or kadhai. Add green chilli, curry leaves and garlic and fry it till it becomes golden and crispy. Add red chilli powder, turmeric, coriander powder, coriander and chaat masala and mix it.

Pour this oil on fried arbi and mix it so it will get coat to all sides of arbi. Once it coats put it again on pan and cook it for another 2-3 mins. And serve it.
