For the dough mix water and yeast, sit. With paddle mixer add olive oil, salt, sugar,and flour. Change to dough hook and knead. Place in oiled bowl and let rise for 1 1/2 hours, till doubled. Remove dough, punch down and divide in half. Form two balls and let sit for 10 minutes. Roll out dough.

For sauce heat oil on medium heat. Add chopped onion, carrot, celery and parsley, cook covered over low heat for 15-20 minutes. Stir occasionally. Remove lid and add garlic, increase heat ot medium, cook garlic for 30 seconds. Add tomatoes,, paste, and basil. Season with salt and pepper. Bring to a low simmer and cook for abut 15 minutes. Blend in blender.

Place rolled dough on pan coated with cornmeal, lightly coat top with I live oil, add sauce and toppings.

Bske at 450°F for 15 minutes or until bead is golden and cheese melted.
