Ingredients

  1. cake:
  2. 1 1/2 cupsvegetable oil
  3. 2 cupssugar
  4. 3eggs
  5. 3 cupsflour
  6. 1/4 tspground gloves
  7. 1 tspground cinnamon
  8. 1/4 tspground nutmeg
  9. 1 tspbicarb soda
  10. 1 tspsalt
  11. 1 cupcoarsely chopped walnuts
  12. 3 cupsMacintosh apples, peeled and cut into small pieces
  13. 1 tbsp(or more!) spiced rum
  14. Icing:
  15. 150 gbutter (room temp)
  16. 150 gconfectioners sugar (icing sugar)
  17. 150 gcaramel sauce (or make your own!)

Steps

    Preheat oven to 325F/160C, butter and flour 2 8inch (or 20cm) pans.

    Beat oil and sugar until thick. Add the eggs 1 and a time, beating well after each.

  3. 3

    Sift together flour, spices, bicarb soda, and salt. Add this into the egg mixture and blend.

  4. 4

    Add the nuts, apples, and spiced rum, and fold well.

  5. 5

    Pour the batter into the buttered pans, and bake about 1hour 10minutes, or until a toothpick comes out clean when poked.

  6. 6

    While the cake is baking, make the icing. Beat the butter until soft. Beat in the icing sugar, about a tablespoon at time. Beat in the caramel sauce, and taste test!

  7. 7

    When the cake is completely cool, spread the icing evenly over all the cake! Top with walnuts and some caramel for a bit of an extra touch.
