Ingredients

6 servings
  • 300 gramsraisins
  • 150 gramscurrants
  • 1 cupdark rum
  • 250 gramsbutter
  • 200 gramssugar
  • 1 tspgrated lemon rind
  • 1 tspcinnamon
  • 1 largepinch nutmeg
  • 80 gramschopped almonds
  • 750 gramsplain four
  • 2 packages( sachet )baking powder
  • 1/2 litermilk
  • 75 gramschocolate chip
  • 6egg
  • 1 stickbutter or fat for greasing tin
  • 1 smallamount of icing sugar for dusting

Steps

  1. 1

    mix all ingredients until dough becomes slightly foamy.

  2. 2

    preheat oven to 220C , grease the tin ,add mixture to funnel cake tin or similar baking tin with hole in middle and bake for about one hour, or until a skewer inserted comes away clean. Dust with icing sugar when cooled.
