I love seasoned salts. These are great for the store cupboard or as a little personal Christmas gift idea. They keep well for 3 months so make them as close to your day of giving as possible and a little goes a long way

Lemon Chilli Salt
1zest of 2 lemons
2 tspdried oregano
2 tspchilli flakes
125 gramssea salt flakes
Rosemary Cumin Salt
2 tspcumin seeds
15 gramsfresh finely chopped rosemary
1/2 tspfreshly ground black pepper
125 gramssea salt flakes
Orange Fennel Salt
1zest of an orange
2 tspfennel seeds
1/2 tspground white pepper
125 gramssea salt flakes
3small jars

For each seasoned salt the same method applies:

Stir the 4 ingredients together in a frying pan over a low heat for 3-4 minutes or until the zest dries

Allow to cool then fill your small jars with the flavoured salts

Write the name and use by date on a label tied to each container. The salts are best used within 3 months

Lemon/chilli goes well with roast chicken. Rosemary/cumin is good with lamb. Orange/fennel is great with pork
