Ingredients

8 ozalmond paste
3egg whites
1/3 cuppowdered sugar
1 1/3 cupflaked coconut
1 cupMINUS 1 tablespoon sugar

Steps

Crumble almond paste into a bowl; add sugar; mix well.

Beat in egg whites until well blended.

Stir in powdered sugar; then fold in coconut.

Drop rounded teaspoonfuls onto greased cookie sheets.

Bake at 350°F about 15 minutes; remove from oven.

Let stand 1 to 2 minutes before removing cookies from pan.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
