2 cupfava beans (yield from 2 lbs fresh)
1 tbspextra virgin olive oil
2 tbspcheese thinly sliced
1/2 tsplemon juice (optional)
1 pinchred pepper flakes

Prepare 2 lbs beans for salad by shelling the beans.

Boil in lightly salted water for 1 to 2 minutes. Drain.

Put beans in ice water.

Remove the husks.

Combine with thinly sliced cheese. Add lemon juice, olive oil and season to taste.
