Ingredients

4 servings
  • 2 lbbeef chuck, cut into 1/2 inch cubes
  • 2 tbspolive oil
  • 1 mediumonion, chopped
  • 2 clovegarlic, minced
  • 1/2green pepper, chopped
  • 8tomatillos, husked, washed and chopped
  • 3 tbspfresh cilantro, chopped
  • 1 1/2 cupbeef broth
  • 18oz. can tomato sauce
  • 1 tbsppaprika
  • 3/4 tspsalt
  • 2 tspcrushed cumin seeds
  • 1/4 tspcracked black pepper
  • 5fresh jalapeno peppers, diced [discard seeds and membranes] or for extra hot use habanero chili peppers

Steps

  1. 1

    brown beef in hot oil in a large heavy kettle. if not u can use any large pot.

  2. 2

    add jalapenos, onion, garlic,tomatillos and green pepper to the beef. toss together.

  3. 3

    add rest of ingredients. mix well. bring to a full boil.

  4. 4

    reduce heat and simmer for about 2 hours our until beef is very tender.

I’ve been making this chili for more than 25 years and it is a very solid Texas Chili. I’ve never made the Tornado Chili, using habaneros, as the jalapeños work great. I make jalapeño cornbread to go with it over white rice and sour cream!!
