  • 2 cuplight syrup
  • 1 lbraisins
  • 2 lbgolden raisins
  • 2 1/2 lbwhole pitted dates
  • 2 lbcandied citron
  • 1 lbcandied pineapple
  • 1/4 lbcandied orange peel
  • 1/4 lbcandied lemon peels
  • 1/2 lbcandied cherries
  • 1/2 lbblanched almonds
  • 1 1/2 cupallpurpose flour
  • 2 tspsoda
  • 1 1/2 tspsalt
  • 2 tspcinnamon
  • 1/2 tspcloves ground
  • 1 tspallspice
  • 1/2 tspnutmeg
  • 1/2 tspmace
  • 1/2 lbbutter
  • 1/2 lbbrown sugar
  • 1 cupplus 2 tablespoon dark brown sugar packed
  • 4large eggs
  • 1 cupcurrant jelly
  • 1 cupmolasses
  • 1 lbcraisins
  • 1 lbdried blue berries
  • 1 lbpecans
  • 1 lbhazelnuts chopped
  • 1 lbcashew nuts chopped
  • 1/2 lbmacadamia nuts chopped
  • 1/2 lbblack English walnuts
  • 3/4 lbBrazilian nuts
  • 1 lbcoconut flakes
  • glaze
  • 1 cupapple juice or cider
  • 1/2 cupwine fruit base apple peach or grape
  • 3/4 cuppacked dark brown sugar
  • 1 tbspcornstarch
  • 1/4 cupapple juice or cider
  • 1/4 tspground cinnamon
  • 3 1/2 cupapple juice or apple cider or apple wine

Steps

  1. 1

    Preheat oven to 350°F Fahrenheit

  2. 2

    Beat the eggs well. then mix all the ingredients. this gonna make a lot of cakes. I love to give them away.

    Take the pans, (use deep one like bundt pans loaf pans and so on), grease the pans with butter or non-stick spray. Then line with parchment paper. I used to use brown bags to line. Either one will work. Then fill pans up almost to top of each pan. bake until done let cool. Then put into fridge it cuts better cooled. I usually give some away or freeze till I eat

    In a pot boil apple juice or cider. Add dark brown sugar. add wine boil 5 minutes. add cinnamon. mix cornstarch and apple juice or cider. add to boiling glaze to thicken. When done pour over the fruit cake. it will harden a bit let it cool. wrap cake and do as you like.

    This makes 8 good sized cakes
