Risotto tastes really good but it contains so much calories. I substituted heavy cream for soy milk and the risotto comes out just as rich. This risotto is so easy Eat it freshly made Otherwise the rice will absorb the moisture and become soggy. If you add some finely grated cheese at the end, it'll taste even more like authentic risotto. Mushroom Risotto – Rice Cooker Method Mushroom Risotto – Rice Cooker Method
Recently I suffered from Sciatica pain and I still can’t keep standing up for long. But I am lucky because, when I am not well, I can benefit from electric cooking tools such as ‘Rice Cooker’. These days rice cookers are so smart and they can do many things. My rice cooker has ‘Quick Cook’ mode and it cooks Risotto just perfect ‘al dente’ better than I can. Have you ever tried Rice Cooker Risotto? If you are in doubt, you should try once. Hiroko Liston -
Tomato Risotto from Uncooked Rice Tomato Risotto from Uncooked Rice
I rearranged a recipe I learned overseas to make it a bit simpler. It is very easy to make, while offering an al dente texture that is quite addictive and cannot be obtained using leftover rice. You can add onions, corn, chicken, sausage, basil, nutmeg etc. to enjoy different flavors. You can make it into omurice by topping it with a soft-cooked omelet. 90 ml raw rice is used in this photo above. If you feel a bit apprehensive about eating unwashed raw rice, use pre-washed rice. Black Rice Risotto with Kale Black Rice Risotto with Kale
I wanted to try something different than Arborio rice. The black rice takes longer to cook, as its a heartier grain, but very tasty! You can add seafood, chicken, and be creative with the vegetables you want to add! ruscheskami -

Noom Friendly Instant Pot Brown Rice Chicken Risotto Noom Friendly Instant Pot Brown Rice Chicken Risotto
This is a favorite of mine. I love risotto and making it with brown rice lets me feel good about it; it's a green food in Noom. The Instant Pot lets you toss everything in and heat go, as per usual. The chicken ends up pulling apart nicely and the risotto has that wonderful creamy texture. This recipe has a lot of flexibility. You can really put in any veggies that you got lying around. I personally go for carrots as they give it a natural sweetness. Chris Jordan -

I posted this almost 2 years ago and haven't made it in a long time. I'm revisiting it as it was always a great dish to use up leftover rice & chicken and mushrooms that may be starting to discolour. I added stock and extra veggies for colour and it's better than before. The kids still love it! Vicky@Jacks Free-From Cookbook -
Mixed Mushroom Risotto Mixed Mushroom Risotto
A good friend of ours was thinking of doing something special for his 15 yr anniversary. He wasn’t a great cook but he and his wife LOVED great food.He had never tried to make a risotto and his wife always ordered it when they are out.He asked me to come over and help him make this delicious dish.It was a beautiful cold crisp winters night, and I left them after making this dish with them sharing this ‘blanket in a bowl’ meal snuggled up by an open fire and a nice bottle of wine.
