Ingredients

30 minutes
1 bottle
  1. 4red bell peppers or other type of red pepper (not hot)
  2. 4 tbspolive oil
  3. 2 sliceswhite bread
  4. 50 galmonds
  5. 20 gnuts
  6. 2 clovesgarlic
  7. to tasteSpanish smoked paprika dust or hungarian sweet paprika
  8. 3 tsprice vinegar
  9. to tasteBlack pepper
  10. 1fresh tomatoe

Steps

30 minutes
  1. 1

    Cut the peppers in half and remove the seeds. Cut the tomatoe in half. Put olive oil on the bread slices, and put all of these on a sheet pan. Sprinkle with olive oil and bake until the bread becomes a toast, and the pepper peels start to become black.

    Wait for the peppers to cool and then peel them. You can peel the tomatoe also.

    In a food mixer mix the bread with the veggies, adding olive oil and the nuts and almond and paprika powder. Add salt if u like. Also add the smashed garlic cloves and the rice vinegar.

    Your romesco is now ready. You can eat it right away or store it in the fridge, it keeps well. Let me know if you tried this recipe :D

I like to discover new spices and ideas.i never try to follow the "official" rules in cooking, but rather my main ingredient is my passion. When i imagine a dish, first i cook it in my head and i try to imagine how it will taste like. if the ingredients will be in harmony, how can i make it technically and what side dishes would match well. what i have learnt from south-east asian cuisines is, that fresh ingredients are unbeatable. in nutrition, taste, look and color, crispiness and moistness. my recent goal is to use as many fresh herbs and veggies as possible. there are only a few dishes that i dont like, few type of seafood and seaweed. any other ingredient is on my horizon if i plan to create something new,cooking is my art.
