Ingredients

  1. 1 cupshredded cheddar cheese
  2. 1/2 cupitalian bread crumbs
  3. 2 tbspdried oregano
  4. 15cherry tomatoes, thin sliced
  5. 2 tspminced garlic
  6. 1 lbfresh, chopped baby spinach
  7. 1/2onion, fine chopped
  8. 2 tbspolive oil, divided
  9. 4artichoke bottoms, rinsed n drained (precooked or marinated works great)
  10. 1/2 tbspwater

    1. In a skillet heat 1 tbl. olive oil add onion, sauté 5 minutes, or until translucent and soft.
    Stir in spinach, water and garlic, and cook 3~5 minutes, or until most of liquid has evaporated. Remove from heat. stir in cheddar cheese. Season with salt and pepper. Cool 10 minutes, or until easy to handle.

    Preheat oven to 350°F. Coat baking sheet with cooking spray, and place artichoke bottoms on baking sheet. Fill each artichoke with spinach mixture and top with cherry tomato slices. Sprinkle tomato topped artichokes with salt, pepper, and oregano, then with breadcrumbs. Drizzle with remaining olive oil.
    Bake 25 to 30 minutes, or until breadcrumbs are browned and crispy.

im 41 and a mom of 3 kids and 2 step kids.and one fiance jason.i love to cook and bake anything! i love trying new foods and new recipes.. and when i try something new with kids i always have a back up plan. i always try to come up with something new and interesting. im always changing my style cuz i love different.

really really good! I skipped the water as well. spinach wilts without it. its a keeper! ~(o.o)~ :ohyeaah ~(o.o)~
