Ingredients

  1. 1red chilli, deseeded and finely chopped
  2. 200 gramsball mozzarella or burrata, torn into pieces
  3. 2shallots, finely chopped
  4. 2 tbspextra virgin olive oil
  5. 1zest 1 lemon
  6. 1 tbspred wine vinegar (balsamic vinegar)
  7. 2 tspsugar
  8. 300 gramstomatoes, diced
  9. 1fresh basil leaves, torn to serve
  10. 1salt and pepper, to taste
  11. 320 gramsspaghetti

  1. 1

    Bring a large pot of water to boil. Add a tablespoon of salt and a splash of oil. Cook the pasta following pack instructions, or until al dente.

  2. 2

    Put the chilli, shallots, lemon zest, oil, vinegar, sugar and tomatoes in a bowl. Add salt and pepper and stir to combine.

  3. 3

    Drain the pasta and combine together with the tomatoe mixture and mozzarella. Scatter over the snipped fresh basil leaves.
