I wanted a recipe for the pounds of dry beans I have in my pantry. This was originally intended to be a side dish of beans, but it ended up being full of liquid and tasted great as a soup. Ingredients

  • 1 lbdry great northern beans
  • 1large onion
  • 2celery stalks
  • 2medium carrots
  • 4garlic cloves
  • 2 tbspbeef boullion paste
  • 1/4 cupolive oil
  • 2 tbspbutter
  • 4 cupwater
  • 2bay leaves
  • 1salt & pepper to taste

Steps

  1. 1

    Soak beans in water overnight (can do this in the crockpot with it unplugged)

  2. 2

    Drain water and pick out bad or split beans.

  3. 3

    Chop celery, carrots, garlic, and onion. Add to crockpot along with bay leaves.

  4. 4

    Add enough water to cover ingredients. 4 cups worked for me. Can add more if needed.

  5. 5

    Add beef bouillon paste (I use better than bouillon beef base), butter, and olive oil.

  6. 6

    Cook on high for 6 hours.

  7. 7

    Remove bay leaves. Add salt and pepper to taste.

  8. 8

    Can use immersion blender to puree part of the soup to thicken if preferred.

    Enjoy :)

I like the Better Than Bouillon options. Now they have one, a ham base, which I'm using with beans.
