Cut excess skin from chicken, rinse and place in a deep bowl

Add all the spices, toss and marinade for an hr in the fridge

Mix eggs and water in a deep dish

In a brown paper bag or zip lock, add flour and remaining ingredients

Remove the chicken from the fridge and pure egg batter over it

Let the egg wash soak into the chicken for about 10 minutes

Add half of the chicken each time to the flour and give it a heavy toss, remove chicken pieces and placed on a wire rack for another ten minutes

Heat oil in a heavy bottom pot until smoking, turn heat to medium
- 9
Add chicken to oil and fry until crisy and golden brown
