Balti is my favourite curry. It has a rich tomato taste with great zesty flavour coming from the coriander, lemon and sweet spices. The spice mix is delicious and it goes well with any fish, meat, poultry or vegetable selection. Use this paste to fry the meat/poultry etc in to seal the meat before adding the curry sauce for a deeper flavour

Ingredients

  1. 4 tbspoil
  2. 1 tspground coriander
  3. 3/4 tspground turmeric
  4. 3/4 tspground cumin
  5. 3/4 tspgarlic powder
  6. 3/4 tspground ginger
  7. 1/4 tspfennel seeds, ground
  8. 1/4 tspcardamom seeds, ground
  9. 1/4 tspblack mustard seeds, ground
  10. 1/4 tspdried parsley
  11. 1 1/4 tspsugar
  12. 1 tspsalt
  13. 1 1/2 tsptomato paste / puree
  14. 3/4 tspapple cider vinegar
  15. 1/2 tspcoconut cream
  16. 1/4 tsplemon juice
  17. 5 tbsphot water
  18. 2 tspgram / chickpea flour (besan)

Steps

  1. 1

    Heat the oil in a pan over a medium heat and cook the spices and parsley, stirring constantly for 1 minute to infuse the oil

    Stir in the sugar, salt, tomato puree, vinegar, coconut cream, lemon juice and hot water. Continue to cook, stirring, for a further 1 minute

    Stir in the flour and cook stirring for a 1 minute more. When the oil separates from the paste it's done

    Let cool then spoon into a small lidded container. Will keep in the fridge for a week

  5. 5

    Makes 5 tablespoons. Use 1 tablespoon per person in your curry base
