I had some leftover roasted chicken (made in slow cooker) and decided to create something fancy for my kids' lunch today. My kids are used to my lousy presentation when it comes to food (ha ha ^^) but sometimes I want to create something more palatable looking for them.

I had some leftover roasted chicken (made in slow cooker) and decided to create something fancy for my kids' lunch today. My kids are used to my lousy presentation when it comes to food (ha ha ^^) but sometimes I want to create something more palatable looking for them.

Ingredients

2 servings
  1. 8 slicesbread (I removed the crusts so I can turn them into rusks, but it's your call, really)
  2. Garlicky butter (you can also use mayo) - https://cookpad.wasmer.app/us/recipes/3401212-garlicky-butter
  3. 8 sliceslettuce
  4. 1/4 cupshredded leftover chicken (rotisserie, poached, roasted, etc.)
  5. 1-2angel hair or spaghetti (optional)

Cooking Instructions

    Flatten the bread.

    Spread the garlicky butter to the flattened bread.

  3. 3

    Add lettuce and shredded chicken.

  4. 4

    Roll. Cut into four pieces.

  5. 5

    To make sure the sandwich won't unfurl, secure it with a bit of angel hair or spaghetti. Within a couple of hours, the pasta will soften. So it's perfect for bento.
