Slice sausage and brown in a skillet.

In a stew pot, boil water with pinch of salt. Once boiling add egg noodles and cook just shy of al dente and drain.

Lower flame from stew pot to med/low. Add the sausage and Rotel tomatoes.

Return noodles to the stew pot and add sour cream and cajun seasoning. Cook another 3-5 minutes until warmed thru.

Serve and add more seasoning to taste.
