
Thai Peanut Chicken

Preheat oven to appropriate temp for chicken, I roasted a whole chicken at 350 for 1 1/2 hours. I have also done it with pieces

Chop garlic and grate ginger

If roasting a whole chicken, cut 2 stalks celery, 2 or 3 large carrots, 1 onion and 1 pepper ( I used sweet) for underneath the chicken.

Add all dressing ingredients over your chicken, I like to put the ginger and garlic underneath the skin of the breast. ** amount depends on size of chicken

Place in oven and set timer

Place all ingredients for sauce in a saucepan. * teriyaki since can be replaced with 1 tbsp soy sauce

Heat until peanut butter is mixed in, no need to cook it much, just make it hot

Too serve pour sauce over chicken and ( if you wish) veggies
