Ingredients

  1. Salad
  2. 3 headromaine lettuce, chopped
  3. 1/2 cupgrated cotija cheese
  4. 1/2 cuproasted pepitas
  5. 2 eachacacados, diced
  6. 1 eachbag tortilla strips
  7. Dressing
  8. 2 canchopped green chilis
  9. 1/3 cuproasted pepitas
  10. 4 largegarlic cloves
  11. 1/4 tspblack pepper
  12. 1 tspsalt
  13. 1/4 cupred wine vinegar
  14. 5 tbspgrated cotija cheese
  15. 2 smallbunches cilantro without stems
  16. 1 1/2 cupHellman' s mayo
  17. 12 ozcanola oil

Steps

30 mins
  1. 1

    Place all dressing ingredients in food processor or blender and blend until smooth.

  2. 2

    Toss salad ingredients together

  3. 3

    Add dressing and toss.

  4. 4

    Garnish with any remaining cheese and serve

  5. 5

    NOTE: This is a restaurant recipe and makes a HUGE batch of dressing. I cut it in half and still have enough leftover to share! My sister-in-law loves this and always gets the extra!

  6. 6

    Variation: For a main course meal add cajun spiced grilled chicken, shrimp or steak
