Ingredients

  • 2 cupscoarse semolina (about 320 grams)
  • 1 cupfine semolina (about 160 grams)
  • 1 cupsugar (about 200 grams)
  • 2 cupsfresh orange juice (about 480 ml)
  • Zest from half an orange
  • 1 teaspoonbaking soda
  • 1 packetvanilla powder or 1 teaspoon vanilla extract
  • 1/2 teaspoonground mastic (masticha)
  • 1 packetbaking powder (about 1 tablespoon)
  • Optional: some roasted slivered almonds
  • Ingredients for the syrup
  • 4 cupssugar (about 800 grams)
  • 3 1/2 cupswater (about 830 ml)
  • 2 tablespoonslemon juice

Steps

    Place all the ingredients in a large bowl and mix well (using a mixer or a whisk), except for one cup of orange juice and the baking soda. First, dissolve the baking soda in the cup of orange juice, then add it to the bowl with the other ingredients. That’s it! The batter is ready. This recipe is so easy, you don’t even need a mixer!

    Pour the batter into a baking pan that you’ve greased with butter or corn oil, and bake in a preheated convection oven at 340°F (170°C).

    Once the dessert turns golden, start preparing the syrup. The syrup should be hot when you pour it over the dessert, so make it toward the end. In a small saucepan, combine the sugar, water, and lemon juice. Once it starts to boil, let it simmer for 7–8 minutes. Pour the hot syrup over the dessert, and if you like, sprinkle roasted slivered almonds on top. Enjoy!
