Ingredients

6 servings
  1. 1 lbskinless, boneless chicken breast halves
  2. 1 canwhole kernel corn (15.25 oz.)
  3. 1 candiced tomatoes including juice (14.5 oz.)
  4. 1 canchicken broth (14.5 oz.)
  5. 1 canenchilada sauce (10 oz.)
  6. 1 cangreen chilies
  7. 1white onion, chopped
  8. 1/4 cupchopped fresh cilantro
  9. 2bay leaves
  10. 3 clovegarlic, minced
  11. 1 tspground cumin
  12. 1 tspchili powder
  13. 1 tspsalt
  14. 1/4 tspground black pepper, or to taste

Cooking Instructions

    Rinse and pat dry the chicken breasts, then place into the bottom of a crock pot.

    Add the corn, tomatoes, chicken broth, enchilada sauce, green chiles, onion, cilantro, bay leaves, garlic, cumin, chili powder, salt, and pepper.

    Cook on low for 6 hours.

    Transfer the chicken to a large plate, shred the meat with two forks.

    Return the chicken to the crock pot and continue cooking for 30 minutes to 1 hour.
