  1. 400 gramsItalian pappardelle
  2. 80 gramsparmesan, freshly grated, plus extra for serving
  3. 60 gramsbest-quality unsalted butter
  4. 1salt

  1. 1

    Cook the pasta in plenty of boiling salted water until al dente. Drain but do not overdrain. Pour the pasta into a heated serving bowl. Add about 4-5 tbsp of the cheese and mix well.

  2. 2

    Cut the butter into small pieces. Add half to the bowl. Toss thoroughly. Add the remaining cheese and butter and toss until all the cheese and butter has melted.

    Serve at once and top with more grated cheese.

    note: we can also use tagliatelle as a substitute for pappardelle!
