Ingredients

  1. 2Lime, zest and juice
  2. 1 tspFresh grated ginger
  3. 2 tbspGrated coconut
  4. 100 gramsCoffee cookies
  5. 30 gramsButter
  6. 1 tspVanilla extract
  7. 50 gramsFine sugar
  8. 200 gramsQuark (fresh soft curd cheese)
  9. 1 1/2Gelatins
  10. 50 mlDouble cream

Steps

  1. 1

    Crumb cookies and mix with melted butter to create bottom of cheesecake.
    Mix all other ingredients for mousse layer. Stiffen in fridge and serve with coffee syrup made of cold strong espresso and sugar.
