Preheat gas rotisserie or oven to 130°C (rotisserie is the preferred method)

Wrap corned beef in a double layer of heavy tinfoil

Place in rotisserie or oven for 3 hours

Remove and turn heat up to 220°C

Take the foil off the beef

Put the beef back into the rotisserie or oven for 30min

Remove and rest covered for 20 minutes.
