Ingredients

15 minutes
Serves 3 servings
  1. 9 ozpork chicharrón (fried pork rinds) (about 250 grams)
  2. ---- For the sauce
  3. 4ripe Roma tomatoes
  4. 2large serrano peppers
  5. 1white onion
  6. 2 clovesgarlic
  7. 1 tablespoonoil
  8. Salt and pepper, to taste
  9. Oregano, to taste

Steps

15 minutes
  1. 1

    In a deep skillet, cook the tomatoes and peppers in water until fully softened.

  2. 2

    Once cooked, transfer the tomatoes and peppers to a blender. Blend until smooth.

  3. 3

    In a skillet, heat the oil and sauté the finely chopped garlic. Add the chopped onion and cook until translucent. Add the blended tomato and pepper mixture.

  4. 4

    Bring to a boil, then season with salt, pepper, and oregano to taste.

  5. 5

    Add the pork chicharrón and let simmer for a few minutes until it softens slightly.

  6. 6

    If you like, you can add pieces of pre-cooked nopal cactus—I enjoy it this way.
