Chop the tomatoes and the onion in very small pieces

Put the olive oil in a deep pan until is heated

Put the tomatoes and the onion in the pan and let them boil until the only liquid left is the oil

Add the eggs, stir a bit and when the eggs are cooked it is ready.

Best served hot with extra olive oil and smoked paprika.
