Ingredients

  1. 1FOR STRAWBERRYS
  2. 1 quartfresh ripe strawberrys, stems removed, and sliced, plus more for garnish
  3. 1/2 cupgranulated sugar
  4. 1FOR VANILLA CAKE
  5. 1 pintspremium vanilla ice cream
  6. 3 cupself rising flour
  7. 1 cupcold unsalted butter (2 sticks) ,cut into cubes
  8. 1/2 tspvanilla extract
  9. 1FOR WHIPPED CREAM
  10. 1 1/2 cupheavy whipping cream
  11. 1/4 cupconfectioners sugar
  12. 1/2 tspvanilla extract
  13. 1/2 cupchocolate shavings for garnish
  14. 1/2 cupor more sparkle sprinkles or your favorite decorating sprinkles

    MAKE STRAWBERRYS

    Combine the sliced strawberrys with the granulated sugar, combine well. Cover and keep at room temperature an hour until very juicy, then chill until needed.

    MAKE VANILLA CAKE

    Place ice cream in refrigerator for one hour to soften.

  5. 5

    Preheat oven to 425. Spray a 9 by 13 inche baking pan lightly with non stick spray. Line bottom of pan with parchment paper.

    Remove ice cream to a large bowl. In a food processor combine flour, cold butter cubes and vanilla. Pulse until mixture looks like a crumbled course meal. Stir into ice cream in bowl, mix with a spoon then with hands gently knead cold dough until it just starts to clump up. Drop clumps of dough evenly into prepared pan. Bake about 20 minutes until light golden brown. Cool on a rack 15 minutes then lift out carefully using the parchment, cake can break if your not careful. Finish cooling and cut into sqares

    MAKE WHIPPED CREAM

    In a large chilled bowl beat heavy cream until soft peaks form, add sugar and vanilla and beat until stiff, keep cold.

    MAKE STRAWBERRY SHORTCAKES

  10. 10

    Place a cake square on a plate, add strawberrrys and some juice on each portion. Top with whipped cream. Garnish with chocolate shavings and decorated sliced strawberry slices. To decorate strawberry slices. Put glitter sprinkles or any you like on a plate press thick slices of strawberrys in sprinkle on both sides to adhere.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
