Ingredients

  1. 4 cupfresh pineapple cut in chunks
  2. 3 tbspVitaspelt flour
  3. 3 tbsporganic brown sugar
  4. 1 cupVitaspelt flour
  5. 1/2 cupbutter
  6. 1/2 cuporganic brown sugar

    Preheat oven to 425°F

  2. 2

    Skin, core, and chop a fresh pineapple into chunks

  3. 3

    In a small mixing bowl add pineapple, 3 tablespoons flour, and 3 tablespoons brown sugar.

  4. 4

    Stir until pineapple is evenly covered and pour into an 8x8 baking dish

  5. 5

    In a clean mixing bowl, combine the remainder of the flour and sugar.

  6. 6

    Cut butter into mixture until it resembles peas.

  7. 7

    Top pineapple with the crumb topping mixture.

  8. 8

    Lighty cover with foil and bake for 40 minutes.

  9. 9

    Remove foil and bake an additional 10 minutes
