When the summer ends and you have way to many fresh garden tomatoes and your looking for a different recipe this one can feed one or 101

Slice tomato in half and scrape out the seeds and drizzle w olive oil and season w salt and pepper

Add shredded cheese and then crack an egg into the cored tomato half and add more cheese to the top and drizzle more oil and season to taste

Put In a 350°F oven till your egg is set and whites don't jiggle

When cheese is melted and egg is set take out and serve w anything you like to compliment I made a quick salad w the insides of the tomatoes and an avocado then topped w green onions

Then enjoy! Taste great w a piece of toasted crusty Italian bread rubbed w a garlic clove
